Dairy-free Broccoli Cheddar Soup

This plant-based soup is perfect for a cold cozy night at home.

This soup is SO good!! It's full of nutrients, flavor, and NO DAIRY. I whipped up the recipe on a chilly day and enjoyed it for days after too.
Most people actually struggle to break down dairy causing stomach aches, bloating, acne and other digestion issues. I can't even have a little dairy now without getting so sick, so finding tasty alternatives has become a skill. Whether your dairy free or just want to enjoy a delicious soup, this recipe is for you!
I make mine in a crockpot but you can just as easily make it on the stovetop if you want to eat sooner.

Ingredients:
Serves 4
Soup
1 small sweet onion diced
½ of a medium chopped zucchini
½ cup shredded carrots
1 cup kale
1 cup chopped broccoli
1 cup cauliflower
1 can coconut milk
2 cup water
1 TSP Smoked paprika
1 TSP salt
1 TSP pepper
1 TSP garlic powder
½ tsp onion powder
½ TSP Paprika
Vegan Cheese
1 cup soaked raw cashews
¼ cup water
3 TBSP nutritional yeast
½ TSP turmeric
Dash of pepper
Dash of garlic powder
Instructions:
4-6 hours before you want to eat, soak 1 cup of cashews in 1 cup of water in the fridge. The cashews need to absorb most of the water before being used in the vegan cheese later.
To make the soup, throw the ingredients in a crockpot and set it on high or low depending on how long you plan to keep the soup in. I personally turn mine to high for 3 hours to let the flavors mend and the veggies get soft. If you plan on keeping it all day just keep it on low.
When the soup is ready, begin to make the vegan cheese.
To make the cheese, put all the ingredients in a high speed- blender. Blend until you achieve a smooth texture.
After the cheese is blended, pour it into the soup and stir. Let the soup sit for 10 more minutes with the lid on to let the "cheese" melt into the broth.
Once everything is well combined, serve up!
*This soup makes an amazing leftover! I swear the flavor is even better after sitting overnight.
